Apple Pie Enchilada AKA "Delicious"

- 2 (21 ounce) can apple pie filling
- 7 (8 inch) flour tortillas
- 1 teaspoon ground cinnamon
- 1/3 cup butter
- 1/2 cup white sugar
- 1/2 cup packed brown sugar
- 1/3 cup water
- 1 teaspoon pure vanilla extract
- 1 package of 8oz cream cheese (room temperature)
- 1/2 cup of powder sugar
- 1/2 - 1 cup of any nut of your choice (optional)
Directions
- Preheat oven to 350 degrees F (175 degrees C).
- Put the tortilla on a plate, covered w/ a damp paper towel. Microwave for 30 seconds to one minute.
- Beat the cream cheese with the 1/2 cup powder sugar until combine together.
- Spread the cream cheese mixture in an even layer on the tortilla.
- Combine the 1 teaspoon cinnamon with the 2 can of apple pie filling. Spoon fruit evenly onto the tortilla. Roll up tortillas and place seam side down on lightly greased 13x9 baking pan.
- Bring butter, sugars and water to a boil in a medium sauce pan. Reduce heat and simmer, stirring constantly for 3 minutes.
- Pour sauce evenly over tortillas; sprinkle with extra cinnamon and any nut of your choice on top if desired. Bake in preheated oven for 30 minutes.
- Makes 7 large tortillas; may be cut in half to serve 14.
